Magic Flan Cake

Called magic, because the cake batter is placed in the bottom of the pan, and magically during baking, it rises to the top! This cake sounds complicated, but is actually pretty easy to make: cake on the bottom; flan poured onto it; it bakes in a Bain Marie (a water bath); chill in pan; flip onto a plate; garnish; enjoy. Plan to prepare it the day before so it refrigerates overnight.

Cake Ingredients:

1/2 cup caramel sauce (homemade or store bought)
1/2 cup, plus 2 T. all-purpose flour
1/3 cup cocoa powder
2 1/2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
4 oz. bittersweet chocolate, chopped
6 T. unsalted butter
1/2 cup buttermilk*
1/2 cup sugar
2 eggs
1 tsp. pure vanilla extract
Flan Ingredients:

28 oz. (2 cans) sweetened condensed milk
2 1/2 cups whole milk, room temperature
8 oz. cream cheese, room temperature
7 large eggs, room temperature
4 large egg yolks, room temperature
1 tsp. pure vanilla extract
Garnish: chocolate curls made from semi-sweet dipping chocolate or what you have on hand

* Measure 1/2 cup regular milk; remove 1/2 tablespoonful milk. Replace with 1/2 tablespoon lemon juice; let sit a few minutes to make faux buttermilk.
Directions
  • Preheat oven to 350°F.
  • Spray a 10-cup angel food (without removable bottom) or Bundt pan with cooking spray. Pour the caramel sauce evenly over the bottom of the cake pan.
  • Make the cake batter:
    • In a medium bowl, sift together (twice) the flour, cocoa, cinnamon, baking soda and salt; mix and set aside.
    • In a large microwaveable bowl, microwave chocolate and butter until chocolate is melted and smooth.
    • Add buttermilk, sugar, eggs and vanilla to the melted chocolate and whisk until smooth.
    • Add chocolate mixture to the dry ingredients, whisking until smooth.
    • Pour the chocolate batter evenly over the caramel in the cake pan.
  • Make flan:
    • Place all flan ingredients in a blender and blend on low speed just until smooth (go easy, since It's a lot of liquid - you may have to do it in two batches) - try not to have it foam - if it does foam, let it 'foam out' before next step.
    • Pour flan mixture over the chocolate batter in the cake pan.
  • Bake:
    • Place cake pan in a large roasting pan in the oven.
    • Add enough hot water to roasting pan - as much as it will hold.
    • Bake for 1 hour and 30 minutes - a toothpick in cake needs to come out clean.
    • Carefully remove cake from oven (and bath) and cool in pan, then refrigerate overnight
  • To serve:
    • Put 1" hot water in the roasting pan and sit cake in pan for a few minutes to warm up caramel and loosen flan - remove from water; place serving plate on top; flip out onto plate. Yeah!
    • Garnish with chocolate curls.
