Called magic, because the cake batter is placed in the bottom of the pan, and magically during baking, it rises to the top! This cake sounds complicated, but is actually pretty easy to make: cake on the bottom; flan poured onto it; it bakes in a Bain Marie (a water bath); chill in pan; flip onto a plate; garnish; enjoy. Plan to prepare it the day before so it refrigerates overnight.
1/2 cup caramel sauce (homemade or store bought) |
1/2 cup, plus 2 T. all-purpose flour |
1/3 cup cocoa powder |
2 1/2 tsp. cinnamon |
1/2 tsp. baking soda |
1/2 tsp. salt |
4 oz. bittersweet chocolate, chopped |
6 T. unsalted butter |
1/2 cup buttermilk* |
1/2 cup sugar |
2 eggs |
1 tsp. pure vanilla extract |
28 oz. (2 cans) sweetened condensed milk |
2 1/2 cups whole milk, room temperature |
8 oz. cream cheese, room temperature |
7 large eggs, room temperature |
4 large egg yolks, room temperature |
1 tsp. pure vanilla extract |
Garnish: chocolate curls made
from semi-sweet dipping chocolate or what you have on hand * Measure 1/2 cup regular milk; remove 1/2 tablespoonful milk. Replace with 1/2 tablespoon lemon juice; let sit a few minutes to make faux buttermilk. |
