Huevos Rancheros Casserole

This is a great idea for a family - it's a take on the traditional dish, Huevos Rancheros, which is usually prepared individually - this makes up into a casserole that can serve 6. Good thinking!

Ingredients:

1 pound Chorizo sausage
2 orange bell peppers, diced
1 small Jalapeno, from a jar - diced
1 - 15 oz. can black beans, rinsed and drained
8 - 10 corn tostadas (crisp corn tortillas)
1 - 10 z. can Enchilada red sauce
1 1/2 cups shredded Mexican cheese
6 eggs, fried, over easy
Garnish: diced green onions and mini- bell peppers

Sauté Chorizo until half cooked, then add orange pepper and Jalapeno and cook through.
Add black beans and heat thoroughly.
Layer half the tostadas, half the Enchilada sauce, half the meat mixture and half the cheese in a 2 qt. baking dish (sprayed).
Continue layering ingredients, ending with the cheese.
Bake in 350°F oven for 15 minutes until bubbly hot.
Meanwhile, fry 6 eggs, over easy. Gently lay on top of casserole after baking. Whites of eggs should be opaque and yolks nearly solid.
Garnish with diced onion and peppers.
